Coffee Flavoured Cashew Nut Cheesecake

Once on Facebook, I saw a post that said something along the line “If broccoli can become pizza, surely nothing is impossible”. It was funny and also a tad bit philosophical for me. Truly, under the right environment, we can become the greatest version of ourselves. This cheesecake also made me think along those lines. These cashew nuts can make a creamy and yummy dessert and the dates gives it a wonderful authentic sweetness. It is easy and quick to make.

Base Ingredients:

1 Cup Cashew Nuts

1 Cup Dates

How to:

Start by making the cashew nut meal. Use the food processor to grind the nuts. Set aside when complete. Alternatively, you can buy the ready-made cashew nut meal. I recommend that you soak the dates in water for 15 minutes before you start with the preparations. This softens them and makes it easier when processing them. I forgot this step when I was making mine and it was a bit of a work out. Place the dates inside the food processor and blitz away. Add a tablespoon of water to make the processing easier if it too thick, until you reach a lovely consistency. Grease the cake pan with butter. Mix the cashew nut meal together with the dates and then press into the cake pan.

Filling Ingredients:

1 Cup Cashew Nuts

1 Whole Lemon

2/3 Cup Coconut Milk

1/3 Coconut Oil

2/3 Cup Coconut Sugar

2 Tablespoons Instant Coffee

1 Tablespoon Vanilla Essence

 

 

How to:

This step is very easy. Soak the cashew nuts the night before. Place all the ingredients inside the food processor and process until you achieve a consistency similar to Greek yoghurt. Easy, right?

Next step is just to place the wet mixture into the prepared cake pan with the base. Then place it inside a freezer for 4 hours, alternatively, wait until it has firmed up nicely inside the freezer. Voilà!!! Your own natural homemade plant based dessert!
